This restaurant’s curry is neither Indian nor European, but their own original. The lack of flour is reminiscent of Indian curries, but Indian cuisine has no tradition of drawing dashi. Borrowing from his experience with yoshoku cuisine, the head chef uses chicken and beef for broth. Only about 10 spices are used, allowing each individual flavour to be brought to the fore. In keeping with the theme of familiar dishes the way they used to be made, the curries are paired with Japanese rice.

Owner-chef Nasu incorporates the seasons of two narrow countries that stretch from north to south, Italy and Japan. To study hometown cooking, Nasu apprenticed in multiple parts of Italy. In spring, he offers baked edible wild plants and scamorza cheese; in summer, fritters of hamo and dry-cured ham. Each dish has a unique character. Nasu feels a strong emotional attachment to the Puglia-style spaghetti with karasumi, a speciality he learned from his local mentor.

Having learnt his craft in Paris, through which the River Seine flows, owner-chef Makoto Shigeno chose Kyoto, with the Kamo River flowing through it, for his French restaurant. In this bistro for beef lovers, fillet and rib roast from cows that have given birth and wagyu rump are on offer. The meat is grilled so that the outside is as fragrant as if it were deep-fried yet still rare in the centre. The succulence of the red meat demands to be savoured.

Charcoal-grilled treats, wine and sake are the signature fare of this izakaya. “It’s primitive, but it suits the ingredients”, says the owner-chef as he starts the fire. The menu is centred on meat, such as venison, duck and beef, though the grill also enhances the flavour of seafood and vegetables. The meat is grilled slowly so enjoy the wait with a glass of organic wine or local sake. Many appetisers are French in origin, such as paté of pork and tapenade-dressed vegetables.
