Owner-chef Akihito Shintani’s ‘Kamigata Chinese’ is a fusion of Chinese and Kansai (also known as Kamigata) gastronomic cultures. Traditional cuisine is cross-fertilised with Japanese ingredients such as kombu dashi, light soy sauce and white miso. His sea-cucumber dish is a good example. Suguki turnip pickles from Kyoto are used in a hot-and-sour sauce, creating a Hunan dish with unique flavours. Osaka vegetables and regional ingredients are incorporated to create a new Chinese cuisine.

Tasting Chinese cuisine in Hong Kong, Shuhei Sawada was astonished by how different it was from Chinese cuisine in Japan and decided to train there. He was confident in his skills, but they were no match for what he was studying. He became absorbed in his work and learned the essence of Chinese cuisine. Since opening his own restaurant, he has pursued originality. His signature dish is crispy chicken, and he also includes Japanese and French dishes such as red sea bream kobujime with rice vermicelli, and a foie gras burger.
